I suppose this will depend on what one intends to do with one's thief overall, but I tend to try to play a thief that can do it all... and at Lvl1 that's not exactly an option, but certain stats work well through the first part of the game. Baldur's Gate is a happy middle ground, and probably why its the unquestionable fan-favourite of the three. Luckily by the time BG2 comes around, he'll easily get Cha 18. The unforgiving battles a little less frequent (but still there on occasion). Great for arcane castors and clerics. CHA would be the dump stat, especially if you take an NPC along who can serve as the spokesperson of your party. I normally don't bother with the pick pocket skill, except in BG2EE when I want to exploit a ton of gold from the Shadow Thief merchant.
